Growing Challenge Update: The First Harvest

With our spinach, radishes, and lettuce getting ready to pick we finally had our first garden fresh meals!

Garden Salad with Grilled Flank Steak and Portobello Mushrooms in a Smoky Chipotle Dressing

We're growing several types of lettuce and many of them are ready for eating. We picked some of our mesclin mix and "master chef blend" leaf lettuces. Our spinach is also getting big so we grabbed some of that as well as some radishes. You can click the link above to see how we put it all together. It's amazing the difference fresh greens make.

Grilled Chicken with Sauteed Broccoli Raab
My father-in-law loves broccoli raab and since I've been married less than a year I'm still in the "trying to impress him" stage and just had to grow some. First blanch the raab in salted, boiling water until it wilts and then dry it off. You then saute it over medium-high heat with diced garlic, pepper flakes, and olive oil until the garlic is tender. We paired it with some grilled chicken for a nice light meal.
